A surfactant has the ability to mix water and oil, which do not mix. It has an amphiphilic structure that is both hydrophilic and lipophilic, and by wrapping around oil it aids in digestion. When it forms two layers it becomes a membrane for cells, protecting them from bacteria, and revitalizing plants by reducing surface tension.
